GULASH SOUP
500 g beef, 4 onions, 2 cloves of garlic, 50 g lard, 1 tbsp flour, 1/4 l red wine, 1/2 l broth, 1 tsp paprika, a little salt and pepper, 1/2 tsp marjoram, 1/2 tsp cumin , 2 peppers, 200 g potatoes, 1 carrot, 5 tomatoes.
Cut meat into small pieces and diced onion. Press garlic. Heat lard in a saucepan and fry the meat in it for about 10 minutes. Add the onion and garlic and fry. Dust the flour over it and let it all sweat through something. Deglaze with red wine and broth, then add the paprika and the spices. Cover and cook for 40-50 minutes.
Clean the peppers, potatoes and root and cut into small cubes. Brew and peel the tomatoes, then core and chop. Add everything to the soup and simmer for another 20 min. Season again and possibly serve with sour cream.
500 g pork, 2 onions, 5 garlic cloves, 100 g tomato paste, 1 tsp broth, 1 teaspoon paprika, 1 pinch of paprika, pepper, 1 pinch of marjoram, 2 pinches of cumin powder, salt, lard.
Chop the onions and garlic and place in a pan. Cut the goulash into bite-sized pieces (better too small than too big) and add to the pan. Salt the goulash. Now mix with the onions and garlic, cover it and let it rest for about 60 minutes.
After 60 minutes add a few pork lard to the pan and sauté the goulash for about 10 minutes at the highest heat. Then cook at low heat (level 4, or 2/3 of the full power of a cooker) for about 15 minutes. Now add 500 ml of water to the pan, add a pinch of cumin and a good teaspoonful of broth, mix well and simmer over a constant heat for about 40 minutes with no lid until the water is completely overcooked.
Now add 500 ml of water in a measuring cup with approx. 100 g of tomato paste, 1 teaspoon of paprika, marjoram, pepper and a little cumin and add to the pan. At lower heat (level 2, or 1/3 of the full power of the stove), simmer again with lid for about 30 minutes with occasional stirring. As a side dish you ideally take dumplings.
